Chicken Bowl with Broccoli and Brown Rice
"Chicken Bowl with Broccoli and Brown Rice": Ingredients: 2 chicken breasts, cut into pieces 2 cups broccoli, cut into florets 1 cup cooked brown rice 2 tablespoons olive oil 2 cloves garlic, minced 1 teaspoon fresh ginger, grated 2 tablespoons low sodium soy sauce 1 tablespoon honey or maple syrup 1 tablespoon sesame seeds (optional) Chopped fresh cilantro to decorate (optional) Instructions: In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the chicken and cook until cooked through and browned on all sides. Remove the chicken from the pan and place on a plate. In the same pan, add the other tablespoon of olive oil. Add the minced garlic and grated ginger. Saute for a few minutes until fragrant. Add the broccoli to the pan and cook for about 4-5 minutes, or until tender but still crisp. Meanwhile, in a small bowl, whisk together the soy sauce and honey (or maple syrup). Return the chicken to the pan and pour the honey soy sauce mixture over the chicken and broccoli. Cook for a few more minutes, until everything is heated through and covered with the sauce. Serve chicken and broccoli over cooked brown rice.
